Welcome to the Un-Official, Underground Menu from The Caboose. Our cooks and staff can be pretty creative at times, and they’ve come up with some tasty dishes of their very own. You won’t find these selections on our full Lubbock restaurant menus, but we think they’re worth trying.

California Taco
(beef taco meat or spicy chicken)
Large Taco (12 in. flour tortilla fried to a golden crisp) with meat, lettuce, tomato, cheese, sour cream and guacamole.

Chef Salad
Trainload sub turkey for chicken.

7 Layer Dip
Beans, meat, guacamole, sour cream, lettuce, pico and queso.

Guacamole Salad

Fajita Philly (beef or chicken)
Fajita meat, onions, bell peppers and mixed cheese.

Triple Combo Fajitas
Combo fajitas (for 1 or 2); choose 3 of the following: Beef, Chicken, Shrimp or Veggie.

Stir Fry (beef, chicken or shrimp)
Meat, steamed veggies (hot), rice and fajita sauce (black portion cup)

Jack Style Fajitas
Any fajita can be upgraded to “Jack Style” smothered with cheese and sauteed mushrooms.

Turkey Supreme
Served hot: turkey, lettuce, tomato, Swiss cheese and mayo.

Spicy Chicken Breast Sandwich
Deep fried chicken breast served on a bun with all lettuce, tomato, pickles and onions.
Dipped in one of the following: HBBQ, 3 Alarm BBQ, or Tabasco.

Sherri’s Tacos
Three crispy beef tacos served with a side of salsa and Italian dressing (no sides).

Steak Fingers
Our original chicken fried steak sliced up into finger-sized strips.

Chicken Fried Chicken Dinner
Fried Chicken breast, one side item, dinner salad and gravy on the side (West Texas Item).

Summer Special
Crispy beef taco, guacamole chalupa, queso chalupa and a side of rice.
